At Confectionately Yours, our toffee is made the way it always has been — by hand, in small batches, with close attention at every step.
We intentionally produce toffee in limited batches because it allows us to stay fully involved in the process. Toffee is sensitive to timing, temperature, and even the day’s conditions, which means it can’t be rushed or automated without losing quality. Working in small batches lets us monitor the toffee as it cooks and make adjustments in real time, using experience and sensory cues rather than fixed timers or machines.
From the moment a batch begins, it requires constant attention. We watch how it moves, how it smells, and how it develops, knowing that subtle changes can affect texture and flavor. Once the toffee reaches the right point, it’s carefully finished and prepared for chocolate — one of the most hands-on and curated parts of our process.
The chocolate is melted, poured, spread, and set entirely by hand. This allows us to control thickness, coverage, and balance so the chocolate enhances the toffee rather than overpowering it. Nuts are added with the same care, ensuring even distribution and the right crunch in every bite.
After the toffee has fully set, it’s broken, sorted, and packaged by hand. This final stage is just as important as the first. Handling each piece individually allows us to maintain consistency, preserve texture, and ensure only toffee that meets our standards makes it into a package. No two batches are ever identical — a natural result of a process that values craftsmanship over uniformity.
Our process takes more time and more attention than mass production, but that’s exactly the point. The result is toffee with a clean snap, balanced sweetness, and layers of flavor that reflect the care put into every batch.
